Stuffed Spanikopita-style Portobellos

Preheat oven to 450. Brush caps with oil, season salt and pepper and place face up on parchment lined baking sheet. In a food processor, combine spinach, parsley, scallions, feta and oil and pulse until forms a chunky paste. Can season as needed. Spoon mixture onto caps. Sprinkle with a little more feta and dried oregano. Bake in oven for 20 min. Let cool and enjoy!
