Hearty Miso Stew

When we cook a meal for ourselves, whether it is something elaborate or simply a piece of toast, it is an act of self-love. The act of taking time to wash our vegetables, chop, peel, and focus on the task at hand can be a meditative and soothing process but most of all it’s affirming to the universe that you are worth the time to care for and nurture. It doesn’t have to be fancy or elaborate, start simple. Greens with olive oil and lemon, toast with avocado and crunchy sea salt, a warming soup or bowl of pasta. In a medium sized pot, add water and miso and bring to a boil, then robust simmer and use wooden spoon to break down miso paste. Add tamari, rice vinegar, grated ginger and garlic then lower to true simmer and let simmer for another 5 minutes. Add dried wakame, spinach, grated carrots. Let simmer for another 5 minutes and turn off heat. Using kitchen scissors, snip wakame into bite sized pieces. Stir in chili oil or crisp if using. Ladle into bowls and garnish w scallions and sesame seeds.
