Delicious vegan quesadillas featuring sautéed Brussels sprouts and garlic, melted vegan cheese, all topped with smashed avocado, cilantro, lime, and jalapeño.

Add oil to a large pan, then add minced garlic and sauté until fragrant. Add the thinly sliced Brussels sprouts and sauté, adding a little water to prevent burning, until browned. Season with sea salt, pepper, and a squeeze of lemon juice. Set aside. On another clean pan, heat a grain-free tortilla. Add vegan cheese, then the cooked Brussels sprouts mixture, and top with another tortilla. Press down gently. Let the cheese melt, then flip the quesadilla. Transfer to a plate once both sides are browned. Slice into quarters and top with smashed avocado and jalapeño slices. Serve with a lime wedge. Enjoy!
