Instagram might have been down but.. just in time for dinner!! 🍜🍜🍜 Curried Coconut Noodles. A quick and flavorful noodle dish with mung bean noodles, zucchini, bell peppers, broccolini, and a rich curried coconut sauce.

Boil a pot of water, add noodles and hydrate for 2 min. Drain and set aside. Heat a pot, add oil, garlic and ginger. Sauté until fragrant. Add zucchini, then tamari and a little water and sauté until slightly browned, and 5 min. Add remaining vegetables, sauté for 3 min then add curry powder and continue to sauté on medium heat. Add coconut milk, and 1 cup of water. Bring to a boil, then simmer for 5 minutes. Turn off heat and mix in cooked noodles. Add chili crisp and stir. Serve hot!
