Preheat oven to 425. On a flat secure surface, use a sharp knife to slice squash in half. Scoop out seeds (save for roasting later!) slice squash into half moons, abt 1/3 inch thick. Drizzle oil, sugar and salt over squash, massage well. Place on parchment lined baking sheet and roast for 15-30 min until lightly browned.
