A ridiculously simple and perfect Pan Con Tomate recipe, featuring toasted bread rubbed with garlic, topped with grated ripe tomatoes, sea salt, and a generous drizzle of olive oil.

Toast up some bread. Wash and dry the tomatoes, then grate them against a cheese grater on the large side until you have a pulpy goopy consistency. Slice a garlic clove in half and rub the cut side onto the warm toast. Spoon the grated tomato mixture onto the slices of toast and season generously with sea salt. Drizzle a good amount of olive oil on top. Eat immediately!
