Preheat oven to 400°F. Submerge potatoes in ice water for at least 15 min. Strain and pat dry. Drizzle oil over potatoes in a bowl and massage in seasoning (garlic powder, smoked paprika, onion powder, sea salt, and pepper). Transfer to baking sheet and roast for 30-40 min until browned and crisp. Whisk together sauce ingredients (ketchup, vegan mayo, mustard, dash hot sauce). Serve potatoes and dip!
