Mega Nutrient Dense Salad with Red Lentils

In a small pot, boil water. Add lentils and cook until al dente (not mushy) about 8-10 min. Rinse under cold water and drain. In a bowl, mix lentils, olive oil, lemon juice, cumin, curry powder and cilantro. Season with sea salt and set aside. Combine salad ingredients in a large serving bowl. In a smaller bowl, whisk dressing ingredients until dressing is creamy. Top with lentil salad, sprinkle with ZOE Daily 30+ and pour over dressing. Enjoy!
