This is an homage to cold noodle Korean soup of my childhood and chilled soy milk broths of the summer. It may seem odd but it’s very popular and so refreshing!

Whisk all broth ingredients together. Plate bowls with ice cubes, noodles, then pour over broth and garnish with cucumbers, scallions, peanuts, drizzle tamari and chili crisp. Enjoy immediately!
