I can’t enough of these warm salads and this one’s a classic, the honey balsamic vinaigrette and peppery arugula adds a bright kick to the roasted veg and salty feta brings it all together IMO :)

Preheat oven to 400. Toss Brussels and squash in oil, vinegar garlic and onion powder, salt/pepper and roast until browned, abt 25 min. Remove from oven and let cool. Whisk dressing ingredients in bowl. In a serving plate, toss arugula with feta and roasted veg. Toss with dressing and enjoy!
