Mushroom Toast

Mushroom Toast 🍄🍄🍄 4-6 cups of mixed mushrooms 2 cloves garlic, thinly sliced 2 tbsp olive oil 1 tbsp tamari 2 scallions, thinly sliced Juice 1/2 lemon Fresh parsley, minced Sea salt and pepper Half of garlic clove 4 pieces Ezekiel bread, toasted Optional: Schmear of vegan mayo Trim mushroom stems and ends, and roughly chop. Heat pan with oil, garlic and let sizzle. Add mushrooms, season with salt, tamari, scallions and pepper. Add a little water to prevent sticking. Continue to sauté and let water evaporate, browning mushrooms on medium heat. Turn off heat and squeeze lemon. Toast bread, rub bread w half garlic clove, schmear mayo, top with mushrooms and parsley.
