Preheat your oven to 425°F. Toss the broccoli florets with 2-3 tablespoons of olive oil and 1 teaspoon of garlic powder. Roast the broccoli at 425°F until browned but still with a bite, which should take about 20 minutes. While the broccoli is roasting, prepare the spicy mayo. In a small bowl, whisk together 1/2 cup vegan mayo, 2 tablespoons sriracha, 1 teaspoon toasted sesame oil, and 1 tablespoon rice vinegar. Add water to thin the sauce if needed to reach your desired consistency. Once the broccoli is roasted, pour the spicy mayo over the hot broccoli and toss to coat. Enjoy immediately!
