Grilled Zucchini with Mint and Feta

The quintessential summer side. The farm stands are bursting with summer squash right now so take advantage. You don’t need to do much here since the zucchini is so naturally sweet. But I find the mint and feta take it to the next level.

Slice zucchini lengthwise in half. Score the flesh of each side slicing criss cross careful not to go down to the skin. Salt generously. Heat a grill pan (or outdoor grill) until hot, brush zucchini with oil on both sides. Grill face down for a few minutes until there are char marks, about 5-6 min. Flip and leave for another 5 min. Plate grilled zucchini, top with mint, crumbled feta and a squeeze of lemon juice and flaky salt and pepper.
