The key to this recipe is slicing all veg long and thin to mimic the texture and shape of the noodles. This dish is super hearty and grounding but packed when prebiotics, antioxidants and fiber thanks to the cabbage and 🍄🍄

Heat a pan, add oil, garlic, ginger and onion. Sauté for a few minutes. Add turmeric, sauté until forks a paste, adding a little water as needed. Add mushrooms, sauté adding tamari and water as needed. After 3-4 minutes, add zucchini and cabbage. Sauté another few minutes until veggies are cooked. Mix in rice noodles and toss until mixed evenly. Season as needed. Toss in cilantro and mint. Serve with lime and enjoy!
