This golden broth is luxurious and rich, woody, and grounding. It's perfect on its own or with some veggies and noodles, offering a deeper flavor profile than many traditional veggie broths.

Heat a large stockpot. Add butter or oil, then garlic and sauté on medium low just until fragrant, ensuring the garlic does not brown. Add onion and sauté for another minute. Add grated turmeric and 2 pinches of salt. Then add water and all remaining broth ingredients and bring to a boil. Lower heat to a simmer and cover for 45 minutes to an hour. Season with salt bit by bit as needed. Strain broth into another pot and use to serve with noodles and vegetables (like rice noodles, lime, mint, and cilantro) or on its own. It freezes well too!
