Cut Persian cucumbers into 1 inch cubes, then smash them with a mallet. Quarter grape tomatoes (or 2 large tomatoes). Thinly slice 1 scallion. Crumble 1 block of feta. Slice 1 head of romaine. Trim and blanch 1 bunch of green beans. For the dressing, combine 2 tbsp capers, 1/4 cup olive oil, freshly chopped dill, juice of 1 lemon, and salt and pepper, then whisk together. Combine all salad ingredients in a large bowl, squeezing tomatoes and their juice into the bowl. Pour the whisked dressing over the salad. Toss with tongs and transfer to a serving plate. Enjoy!
