Cool-y Marouli Salad

A refreshing and simple Greek-style romaine salad with scallions, dill, onion, feta, and a lemon-caper dressing.

Thinly slice the 3 heads of romaine. Thinly slice 3-4 scallions up to the root. Roughly chop a handful of dill. Thinly slice half of a white or red onion, or use a mandolin. (Optional: Add 1/4 cup of sheep feta or vegan feta.) Combine all salad ingredients in a large bowl. For the dressing, whisk together 1/4 cup olive oil, the juice of 1 lemon, 1 tablespoon capers, salt, and pepper in a medium bowl. Pour the dressing over the salad, toss to combine, and serve immediately.
