Preheat oven to 450. Rub squash in olive oil, salt, and pepper. Roast until browned. Toast bread and rub well with sliced garlic clove. Spread mustard and mayonnaise on the bread. Stack sandwich with cooked vegetables, raw vegetables, and arugula. Slice and enjoy!
