Thai Salmon Fried Cauliflower Rice

Preheat oven to 425. Marinate salmon in tamari, maple and oil, roast for 20 min or until done. Set aside. Heat large pan or wok with oil, add garlic, onion and ginger. Sauté until fragrant. Crack egg into pan and quickly scramble. Add remaining veggies with tamari and sauté for 3-4 min. Add cauliflower rice and sauté until defrosted and slightly browned. Flake salmon with fork and stir into rice. Season as needed. Stir in half the fresh herbs and lime juice. Serve with extra herbs and chili crisp. Enjoy!
