Heat coconut oil in a pot. Add minced garlic, onion and ginger. Add minced celery, carrots, bell pepper and bay leaf. Season with salt and pepper. Saute for 5 minutes. Add 3 boxes of ZENB Roasted Red Bell Pepper sauce and water and bring to a boil. Then simmer for 10-15 minutes. Add two cans of coconut milk and stir. Serve and drizzle coconut cream and cilantro for garnish.
