Caramelized Baked Plantains

Ever since @paolaatlasonwellness showed me how to properly make platanos I literally can’t stop. So grounding, easy to digest (baked I treat them as a starch with leafy greens) and just so so delicious, they’re my colder weather all star. I slightly riffed on Paola’s recipe below to get the super soft caramelized version that I lust for.

Preheat oven to 375. Slice plantains in slightly thicker than half inch rounds, place flat on a parchment lined baking sheet, not touching and not overlapping. Drizzle avocado oil and massage well w hands so evenly coated. Bake for 15-20 minutes until slightly golden browned on there bottom side. Using tongs flip each round and bake for another 15 minutes. Serve immediately (they’ll harden as time goes by) or serve in bowl cover led with a tight fitting lid. Enjoy!
