Preheat oven to 425. Snap off ends of asparagus. Peel base of each spear. Blanch asparagus in salted water until tender, about 3-4 minutes. Drain and cool. Toss in olive oil. Spread evenly on parchment lined baking sheet. Sprinkle cheese over asparagus. Bake until cheese begins to brown and crisp, about 15 minutes. (Careful to watch not the cheese burn) take out if the oven and let cool. Peel off parchment, break into crisps and enjoy!
