A quick and simple recipe for classic miso soup with scallions, tofu, and shiitake mushrooms.

Add water and miso paste to a small pot and bring to a boil. Then simmer on low and add scallions. Stir and dissolve miso paste. Once dissolved after about a minute or two, add shiitakes and tofu and simmer for another couple minutes until mushrooms are cooked. Enjoy!
