The perfect almost summer dish when summer squash, peppers and tomatoes abound! This is a cheat-y version of the one I learned to make when watching Godard films and hunting for Miss Sixty knockoffs at Galeries Lafayette as a pre-teen abroad in Nice, you can almost taste the Euro Dance Pop Now compilations!

Preheat oven to 425°F. Cut zucchini into rounds, core and slice bell pepper, peel and slice onion. Spoon some marinara into a cast iron pan or baking dish, follow by zucchini, pepper and onion, top with marinara, olive oil and sea salt, pepper and herbs. Bake for an hour. Enjoy!
