A creamy, herbaceous, and delicious potato salad that's perfect for picnics or BBQs, made without mayo. A dollop of vegan or regular mayo can be added if desired.

Scrub and boil potatoes in heavily salted water under tender and easy to spear with a fork. Let cool. Once cool, quarter and transfer to a bowl. Add chopped celery, herbs, garlic. Add Dijon, olive oil, lemon juice, capers and salt and pepper. Mix well, slightly mashing with your fork. Enjoy warm or cold!
