This cruciferous medley is a prebiotic bonanza, with seasonable raw veg shaved on a mandolin or chopping finely and massaged in a kicky vinaigrette. So excited for you guys to try this one it’s sooo good!

Add red onions to a small bowl with vinegar, salt and sugar. Let pickle for 15 min or longer. Strain onions, saving the vinegar for dressing. Whisk dressing ingredients including the pickling vinegar, set aside. Combine all finely chopped raw veg into a large bowl. Top with dressing and massage well with hands. Toss in chopped jalapeño and half the cheese. Plate and top with more cheese. Enjoy!
