A quick and easy vegan quesadilla featuring sautéed broccolini, melted vegan mozzarella, and a hint of lemon and tamari, topped with hot sauce.

Heat a pan and add olive oil. Add broccolini, tamari, and lemon juice, then sauté until the broccolini is browned. Remove the broccolini from the pan. Place tortillas in the dry pan, add vegan cheese, and cover on low heat until the cheese is melted. Add the sautéed broccolini onto one half of the tortilla, then fold the other half over. Slice the quesadilla into quarters and top with hot sauce before serving.
