A quick and easy recipe for flash-water-fried baby bok choy, seasoned with garlic, ginger, tamari, rice vinegar, and toasted sesame oil.

Gently rinse the baby bok choy, but do not dry it. Heat a pan with 1 teaspoon of oil. Add thinly sliced garlic and ginger to the pan. Toss in the whole bok choy. Add tamari, rice vinegar, a little hit of toasted sesame oil, and more water to the pan. Cook down for about 4 minutes and then serve.
