Yellow Rice with Herby Green Sauce

The yummiest rice thanks to this new method that makes it super fluffy and not clumpy at all. The soaking and steaming steps are everything! Served with a vibrant, herby green sauce.

Sauté onion and garlic in a large pot until fragrant. Add turmeric and stir into a paste. Turn off heat. Rinse rice in water until it runs clear. Then soak the rice in water fully submerged for at least 30 minutes. Drain the soaked rice and transfer to the pot with the onion and garlic. Add 1 1/4 cup water and bring to a boil, then reduce heat to a low simmer, covered, for 15 minutes. Turn off the heat, and keep the pot covered with a dish towel and lid over it to steam. While the rice is steaming, combine all sauce ingredients (parsley, cilantro, garlic, honey, lime juice, jalapeño, olive oil, salt, and pepper) into a blender and blend until creamy. Season the sauce as needed. After 15 minutes of steaming, season the rice and transfer it to a serving platter or bowls and spoon on the herby green sauce. Enjoy!
