A versatile chopped salad with a 'NYC meets Beverly Hills' vibe, easily customizable with additions like hearts of palm, sweet peas, corn, or olives, or kept simple for a light meal.

Chop all salad ingredients (romaine, radicchio, endives, bell pepper, and Persian cucumbers). Add them to a large bowl. In a smaller bowl, whisk together the dressing ingredients: finely chopped fresh basil, finely chopped fresh parsley, olive oil, water, juice of 1 lemon, a dollop of Dijon, and salt and pepper to taste. Pour the dressing over the chopped salad ingredients and toss well to combine. Enjoy immediately.
