Sea’s Favorite Hearty Miso Stew

Nobody loves a brothy miso with tofu more than our little lady but wanted to pack it with a little more than your average for a heartier nutrient dense meal. This could live alone with leafy greens or with a side of toast and nutty brown rice if you like.

In a medium sized pot, add water and miso and bring to a boil, then robust simmer and use a wooden spoon to break down miso paste. Add tamari, rice vinegar, grated ginger and garlic then lower to true simmer and let simmer for another 5 minutes. Add rinsed, soaked arame or wakame, spinach, grated carrots, edamame beans and tofu. Let simmer for another 5 minutes and turn off heat. Ladle into bowls and garnish with scallions and sesame seeds. Optional: add a dash of togarashi or cayenne, or raw grated ginger on top.
