Shiitake Larb Lettuce Wraps

Flavorful Shiitake Larb served in crisp lettuce or cabbage cups, seasoned with tamari, cumin, lime, and fresh herbs.

Add shiitake caps, garlic, ginger and shallot in food processor and pulse until chopped (not too fine or mushy). Heat pan with oil, add mushroom mixture and sauté on medium high heat. Add tomatoes and water chestnuts. Season with tamari, cumin, lime zest and sauté on medium until cooked and browned (you may need to add a little water to cook down but you don’t want texture to be too wet.) Squeeze in lime juice and season with salt and pepper, set aside off heat. Stir in fresh chopped herbs. Once cool, spoon mixture into lettuce or cabbage cups. Garnish with more fresh herbs (basil, cilantro, mint), sliced jalapeño, chili crisp, lime wedges, micro greens, or shaved carrots, and enjoy!
