A delicious and easy-to-make curried cauliflower flatbread, featuring roasted cauliflower, spinach, and vegan mayo on a gluten-free crust, finished with a dash of cayenne.

Preheat oven to 400 degrees Fahrenheit. In a large bowl, massage cauliflower florets with avocado oil, curry powder, and sea salt. Spread vegan mayo evenly onto the flatbread. Top with baby spinach, then arrange the seasoned cauliflower over the spinach. Roast for 20-25 minutes, or until the cauliflower is tender and lightly browned. Remove from oven and add a dash of cayenne before serving.
