Fam Bam Mac n Cheeze (thank you @anthropologie for having me on their IGTV, head to their series to see video breakdown or make the recipe below!) 1box gluten-free pasta elbow 1 head of broccoli (or string beans or spinach or peas // any green veg) Cheezy Sauce 1 butternut squash 1 cup olive oil 1/2 cup nutritional yeast 1 tsp Dijon 1/2 cup plain oat or almond milk Water to blend Seasoning: 1 teaspoon garlic powder 1 teaspoon onion powder Sea Salt 1/2 teaspoon smoked paprika For parents: Sliced jalapenos Chopped cilantro Pickled red onion Preheat oven to 425. Remove peel, core and chop butternut squash. Rub with 2 tablespoons of olive oil and roast on parchment paper lined baking sheet for about 30 minutes or until browned and carmelized. Let cool. While squash is roasting, cook pasta as directed. Let cool. In a high-speed blender or food processor, combine roasted squash, olive oil, nutritional yeast and seasoning and blend until creamy. You might need to add a little water or oil to achieve a creamy "cheesy sauce" consistency. Season to your liking. In a large bowl, add pasta. Slowly pour in sauce and mix until you get the consistency you like. Gently toss in steamed broccoli florets. Serve in bowls and enjoy! Top with grown-up toppings if desired
Preheat oven to 425°F (220°C). Remove the peel, core, and chop the butternut squash. Rub the chopped squash with 2 tablespoons of olive oil and roast on a parchment paper-lined baking sheet for about 30 minutes or until browned and caramelized. Let the roasted squash cool. While the squash is roasting, cook the gluten-free pasta as directed on the package. Let the pasta cool. In a high-speed blender or food processor, combine the roasted squash, 1 cup of olive oil, nutritional yeast, Dijon, plain oat or almond milk, garlic powder, onion powder, sea salt, and smoked paprika. Blend until creamy. You might need to add a little water or more olive oil to achieve a smooth, creamy "cheesy sauce" consistency. Season the sauce to your liking. In a large bowl, add the cooked pasta. Slowly pour in the prepared cheesy sauce and mix until the pasta is coated to your desired consistency. Gently toss in steamed broccoli florets. Serve in bowls and enjoy! Top with sliced jalapenos, chopped cilantro, or pickled red onion if desired for grown-ups.
