Since going plant-based, Indian food has been my savior for when I'm craving something really indulgent. I've discovered so many vegan dishes and this bhindi masala aka crispy okra is a fave. Prior to this dish, I've always thought okra as "slimey" but dry frying in a cast iron pan and letting it sit without too much poking is key. This recipe has minimal oil and I use frozen okra since I still have no idea when it's "ripe" but baby steps, ya feel me?
