Brussels Quesadillas

Delicious vegan quesadillas featuring sautéed Brussels sprouts and garlic, melted vegan cheese, all topped with smashed avocado, cilantro, lime, and jalapeño.

What you need
lemon
lime

pepper

oz vegan cheese

hass avocado

tsp fine sea salt

clove garlic clove

jalapeno pepper

tbsp olive oil

cup brussel sprouts
Instructions
Add oil to a large pan, then add minced garlic and sauté until fragrant. Add the thinly sliced Brussels sprouts and sauté, adding a little water to prevent burning, until browned. Season with sea salt, pepper, and a squeeze of lemon juice. Set aside. On another clean pan, heat a grain-free tortilla. Add vegan cheese, then the cooked Brussels sprouts mixture, and top with another tortilla. Press down gently. Let the cheese melt, then flip the quesadilla. Transfer to a plate once both sides are browned. Slice into quarters and top with smashed avocado and jalapeño slices. Serve with a lime wedge. Enjoy!View original recipe
