Not quite babaganoush, not quite eggplant dip..this is what we call Caviar d’Aubergines. What I ate almost everyday when I lived next to the Jewish district in the Marais in Paris. Each Sunday when stores opened after Shabbat, I would walk past the falafel stands with lines snaking around the corner to the less popular epicerie run by a local family to pick up a container of caviar d’aubergines, a luscious creamy dip of eggplant and generous tahini and snack on it all week with fresh baguette. It was expensive and worth every Euro. It was heaven and I never forgot the taste. Now you can have it too.
