Cheezy Broccoli Rice Tacos!

What you need

bunch cilantro

cup sauerkraut

cup vegan mayonnaise

bunch sprouts

fl oz hot sauce

pepper

tsp salt

corn tortilla

bunch vegetable mix

cup broccoli

clove garlic powder
cup vegan mozzarella

radish

tsp garlic clove

tbsp avocado oil
Instructions
Preheat oven to 400°F (200°C). Massage 2 tbsp avocado oil and garlic powder into your chosen vegetables and season with salt and pepper as needed. Roast the vegetables for 20 minutes until done. Set them aside. In a pan, add the other 2 tbsp avocado oil and minced garlic, then sauté until fragrant. Add the broccoli pulsed into rice and sauté until slightly cooked (you can add a little water to help cook it down if needed). Add the vegan cheese, cover the pan, and cook on low heat until melted. Stir again until the mixture is creamy. Set aside the cheezy broccoli rice. Assemble your tacos with the roasted vegetables, cheezy broccoli rice, and your desired fixings (vegan mayo, lime, cilantro, shaved radish, sprouts, kraut, hot sauce). Enjoy!View original recipe
