Cold Noodle Soup in Milky Cucumber Broth aka Bonberi Naengmyeon

This is an homage to cold noodle Korean soup of my childhood and chilled soy milk broths of the summer. It may seem odd but it’s very popular and so refreshing!

What you need

cucumber

tsp salt

oz rice vermicelli

cup unsweetened almond milk

tsp ground ginger
tbsp tamari soy sauce

tsp sesame oil

oz peanut
Instructions
Whisk all broth ingredients together. Plate bowls with ice cubes, noodles, then pour over broth and garnish with cucumbers, scallions, peanuts, drizzle tamari and chili crisp. Enjoy immediately!View original recipe
