Preheat oven to 350. Combine apples, syrup, zest, corn starch, vanilla and toss in a bowl until fully coated. Transfer to a baking dish or cast iron pan. In a separate bowl, combine crumble ingredients, massaging well with hands until it forms a crumble texture. Top over apples evenly. Bake for 1 hour.
