Gravlax Style Baked Salmon!

I love this recipe because it’s great for entertaining or for keeping in your fridge to add to salads and lettuce wraps. It’s slightly sweet and tangy and perfect for summer!

What you need
lemon

bunch fresh dill

tbsp dijon mustard

tbsp apple cider vinegar

clove garlic clove
lb salmon fillet

cup olive oil

tsp coconut sugar

tbsp juniper berries

tsp fine sea salt

tbsp coriander seed

tsp black peppercorn

tbsp mayo
Instructions
Preheat oven to 400°F. Place all brine ingredients (fresh dill, coriander seeds, juniper berries, sea salt, whole black peppercorns, coconut sugar, apple cider vinegar, olive oil, and lemon juice) into a food processor and pulse until it forms a paste. Pat the paste onto the salmon until evenly distributed. Bake until done, about 20-25 minutes, being careful not to overcook it. While the salmon is cooking, blend or whisk the dill sauce ingredients (freshly chopped dill, Dijon mustard, olive oil, grated garlic clove, vegan or regular mayo, lemon juice, coconut sugar, sea salt, and pepper to taste) together. Let the salmon cool slightly after baking. Spoon the dill sauce onto the salmon and serve!View original recipe
