🌿Green Sauce with Penne🌿Not quite pesto but certainly could be if it wanted to be. A little more mellow and creamy and for some reason feels more green. Recipe below 💚 6 cups of packed spinach or kale or any dark leafy green 2 cloves garlic 4 tablespoons olive oil Juice of 1 lemon 2-4 tablespoons nutritional yeast to taste 1/2 cup plant-based milk (unsweetened and no flavor) 1 cup of frozen peas Sea salt to taste Chili flakes 1 box of pasta, cooked as directed In a medium pot, heat 1/2 pot with salted water and bring to boil. Add greens and boil on medium to high for 4-5 minutes. Turn off heat and let cool. Keep in water. Cook a box of your fave pasta as directed. When spinach is cool, transfer to blender or food processor using some of the cooking water to help blend, about 1/2 cup. Add garlic cloves, lemon juice, olive oil and sea salt. Blend until creamy. Transfer back to empty pot. Add cooked pasta and mix well on medium heat. Add plant based milk and nutritional yeast and continue to mix. Add in defrosted peas. Season more with salt if needed. Serve w chili flakes. (For kiddos I omit them chili flakes and extra lemon and I boil the garlic w the spinach for a more mellow flavor)
