Chop up a lot of vegetables of your choice. In a large pan, sauté 2 tablespoons of avocado or coconut oil. Add 1 teaspoon of grated ginger and 1/2 minced onion, and sauté until fragrant. Add the chopped vegetables and season generously with Tamari, soy sauce, or coconut aminos. Sauté until the vegetables are tender, about 10 minutes. Add 2 tablespoons of rice vinegar or apple cider vinegar and 1 tablespoon of toasted sesame oil, then toss everything together. Add cooked rice noodles and mix well off the heat. Optional: For baked tofu, massage tofu in tamari and sesame oil, then roast at 450°F (232°C) for 15 minutes. Serve the noodle bowl with a side of raw greens.
