Instant Pot White Bean Stew

Soak 1 pound of dried cannellini beans or white northern beans overnight in water with a piece of kombu and a splash of apple cider vinegar. When ready to cook, set the Instant Pot to sauté mode and add 1 tablespoon of avocado oil. Add the chopped garlic, 2 bay leaves, smoked paprika, and dried oregano to the pot. Then, add the soaked and strained beans, 4 cups of water, 1/2 teaspoon of sea salt, and 1 cup of crushed tomatoes or marinara. Switch the Instant Pot setting to high pressure for 40 minutes. You can release the pressure after 20 minutes or allow it to naturally release longer. Once cooking is complete, add the juice of 1 lemon and the destemmed and roughly chopped kale. Season the stew finally with more sea salt and pepper to taste. Serve hot!
