Japanese Yam Parfaits!

Love this grounding sweet treat for a late wintry breakfast or dessert, sweetened only by root veg and dates!

What you need
cup dairy-free yogurt

tbsp avocado oil

yam

cup granola
tbsp date palm sugar
Instructions
Preheat oven to 400. Slice yam into 1/3 inch thick slices. Rub with oil and sprinkle date sugar and cinnamon. Place on parchment lined baking sheet for 40 min or until golden brown. Let cool. Once cool, plate parfaits in small glass jars with one scoop of coconut yogurt, followed by a slice of baked yam, yogurt, granola, yogurt, yam and so on until filled! Enjoy!!View original recipe
