Kale and Cucumber Salad with Sesame Dressing

Thinly slice the kale and toss it in a bowl. Get some crunchy Persian cucumbers and slice them on a mandolin. Add the sliced cucumbers, chopped tomato, and sesame seeds to the bowl with the kale. To make the dressing, combine 1 tbsp rice vinegar, 1 tbsp tamari, 5 drops toasted sesame oil, and 2 tbsp olive oil in a separate small bowl. For extra credit, add some grated ginger to the dressing. Pour the dressing over the veggies and massage well with your hands until the kale is softened and evenly coated.
