Lazy Person’s Ratatouille

What you need

yellow onion

zucchini

pinch fine sea salt

pinch black pepper

eggplant

italian tomatoes

tbsp olive oil
Instructions
Preheat oven to 400°F (200°C). Chop each vegetable evenly into roughly 1-inch cubes. Spoon some marinara into the bottom of a cast iron pan. Add the chopped vegetables to the pan. Top with the remaining marinara/crushed tomatoes. Sprinkle sea salt (if not using marinara) and cracked black pepper. Bake for 20 minutes. Remove from the oven and toss with tongs. Bake again for another 20 minutes and toss. Bake for a final 20 minutes (total baking time is 1 hour). Remove from oven and let cool for at least 15 minutes before serving to allow the flavors to expand.View original recipe
