Lazy Ratatouille

The perfect almost summer dish when summer squash, peppers and tomatoes abound! This is a cheat-y version of the one I learned to make when watching Godard films and hunting for Miss Sixty knockoffs at Galeries Lafayette as a pre-teen abroad in Nice, you can almost taste the Euro Dance Pop Now compilations!

What you need

zucchini

yellow onion

bell pepper

cup olive oil

fl oz marinara sauce

tsp fine sea salt

tsp herbes de provence
Instructions
Preheat oven to 425°F. Cut zucchini into rounds, core and slice bell pepper, peel and slice onion. Spoon some marinara into a cast iron pan or baking dish, follow by zucchini, pepper and onion, top with marinara, olive oil and sea salt, pepper and herbs. Bake for an hour.
