Lemongrass Cauliflower Rice!

What you need

bunch fresh cilantro

fl oz sriracha
lime
cup bok choy

tsp fine sea salt
tbsp tamari soy sauce

tbsp lemongrass

tbsp rice vinegar

clove garlic clove

yellow onion

head cauliflower rice
cup mushrooms

tbsp coconut oil

tsp ginger

bell pepper

cup broccoli florets

jalapeno

carrot
Instructions
Add coconut oil or cream to a heated pan, add onion, ginger, garlic and lemongrass, sauté until fragrant and onion is translucent. Add chopped vegetables. Season with tamari and rice vinegar. Sauté until vegetables are cooked through. Add frozen cauliflower rice (no need to defrost), sauté and season with salt as needed. Cover and let steam for 5 minutes on low heat, stirring occasionally. Remove lid, turn off heat, add jalapeño, lime juice and fresh herbs. Mix well. Transfer to serving bowl. Serve in lettuce cups with extra herbs, Sriracha and lime!View original recipe
