Medicinal Mushrooms and Kale

Ok guys not that kind of medicinal, these Asian varietals of enoki, shiitake and king oyster can be extremely potent and supportive of immunity, repair cell damage, are anti inflammatory and even anti fungal, weird right? It’s the only kind of microdosing I’m into currently 🍄😉

What you need

tsp black pepper

oz sesame seed

clove garlic clove

fl oz sesame oil

bunch enoki mushrooms

cup shiitake mushroom caps
tbsp tamari soy sauce

tsp fine sea salt

bunch lacinato kale

cup king trumpet mushrooms

tbsp avocado oil
Instructions
Bring pan to medium high heat. Add oil or butter, add garlic, then mushrooms except enoki, sauté for two minutes, add tamari, rice vinegar, sesame oil and toss until browned, adding a little water if needed. Season with salt and black pepper. Add enoki and kale, toss until kale is wilted and bright green. Top with toasted sesame seeds. Enjoy hot!View original recipe
